Product Description

A Caribbean favorite that celebrates the cultural diversity of South Miami, Florida. During the early sixties, immigrants escaping communist Cuba settle in what is now called Little Havana. Calle Ocho was Little Havana's main street and offered low-income housing. As the Cubans moved up economically, they moved to better neighborhoods.

Ingredients: Black beans, spices, sugar, black pepper, garlic, and jalapeno peppers.

1 1/2 qt water
1 green bell, chopped
1 red bell pepper, chopped
2 medium onions, chopped
2 cloves garlic, chopped
bay leaf
1/3 cup olive oil
spice packet (included)
1/2 tsp. salt or to taste
2 tbl red wine vinegar
1/2 lb spicy italian or chorizo sausage

Cooking Directions:
1. Sort through and thoroughly wash beans. Soak beans four hours or overnight in water to cover by two inches.
2. Drain and rinse the beans.Place the beans in a medium 4-6 qt pot along with the water, green pepper, onion, garlic, and bay leaf. Cover and bring the beans to a boil. Reduce heat to medium low, crack the lid, and cook beans for one hour. Check and stir very fifteen minutes. Add more water to cover, if necessary.
3. The Sofrito- In a large skillet heat the oil over medium heat. Add the onions and peppers. Saute for three minutes. Add the spices and the salt and saute for two additional minutes. Remove sofrito from the heat and place half of it in a processor along with two cups of the cooked beans. Pulse until pureed. Place pureed mixture and the remaining sofrtio mixture into the beans along with the vinegar. Saute the sausage three minutes in the same skillet. Combine with the beans. Simmer the mixture 15-30 minutes, until it has the consistency of thick gravy.
4. To serve, place 1/2-1 cup long grain or spicy Cuban rice in bowls and top with our Calle Ocho Black Beans mixture. Garnish with a fresh lime wedge and chopped red onions.

Vegetarian Version- Omit the sausage. Complete recipe as directed. Delicious!

Put on your favorite Salsa CD and serve this tasty dish with a garden fresh salad, crusty pan cubana bread, and key lime pie for dessert.
